Satay, or barbikyu is a very popular dish in the Philippine culture. Satay can be home-cooked or prepared in batches especially when it is served in town fiestas, birthday parties, and other gatherings. This dish is eaten for lunch, snack, and dinner and is also a famous item that goes along with beer and other drinks. Making this dish is extremely easy, it is like cooking barbeque. You have to marinate the beef overnight and then skewer it using bamboo sticks; the marinade left over can be used to baste the beef while you are grilling it to help make the meat absorb more of this flavor.
Ingredients for this Beef Barbikyu
• 1 1/2 lbs boneless beef, sliced
• 10 to 15 pieces bamboo sticks
• 1/4 cup soy sauce
• 4 tablespoons minced lemongrass
• 4 tablespoons fish sauce
• 1 teaspoon ginger
• 2 teaspoons garlic, minced
• 2 teaspoons turmeric powder (or ground turmeric)
• 2 tablespoons peanut butter
• 3 tablespoons brown sugar
• 1 1/2 tablespoon curry powder
• Enough peanut sauce* (see recipe below)
• 1 teaspoon red pepper
Procedure to make this Barbikyu:
1) Combine soy sauce, turmeric, red pepper, fish sauce, curry powder, peanut butter, lemongrass, sugar and garlic in one big bowl. Stir until mixture becomes even and set aside.
2) Toss the beef meat into the mixture and marinate it overnight or 5-7 hours.
3) Skewer the beef using the bamboo sticks.
4) Each side of the beef should be grilled for 4-7 minutes. Use the left over marinade for basting the beef.
Once cooked, transfer to a larger plate and serve with peanut sauce.
* Ingredients for the peanut sauce
• 4 tablespoons coconut milk
• 1 1/2 tablespoons brown sugar
• 2 teaspoons sesame oil
• 5 tablespoons water
• 2 teaspoons minced garlic
• 1 teaspoon soy sauce
• 2 tablespoons peanut butter
• 1 teaspoon lemon juice
• 1/2 cup roasted peanuts, pounded
• 2 tablespoons fish sauce
• 1/2 teaspoon chili powder
Procedure to make this Barbikyu:
Toss all the ingredients in a saucepan.
Turn the heat and gently stir.
Once the mixture simmers, lower the heat and let the sauce thicken.
Transfer cooked sauce in a bowl and serve with the beef satay.
